Hi. Welcome to Between the Dots. I’m Hester, a photographer, writer, recipe developer, and chaplain-to-be. In this tiny corner of the world wide web I share my stories about food, life, health and travel.

For me, cooking and eating are a way to connect with others. However, that’s not always easy when living with a list of foods you’d better avoid. So I started this place as a way to share recipes that I am able to eat and show the world that it is possible to eat flavourful meals while avoiding certain foods. Originally that list consisted of onions, garlic and mushrooms. But that list has somewhat expanded in the past couple of years to FODMAP and lectin containing foods. For a while, these restrictions have left me a bit at a loss as to what I could eat. So I started a new journey to explore food. And I’d love for you to follow along. Although, I’d like you to keep in mind that a diet is something strictly personal. What works for me, might not work for you. Therefore, I encourage you to use the recipes I share as a framework. Modify them based on your individual needs and preferences.

When I’m not roaming the earth, I live in the Netherlands with my husband Matthijs, our three bunnies, and my book and plant collection. I hope you will enjoy your time here.
